chicken parmesan & zucchini “pasta”

Rather you are a college student trying to maintain a healthy diet and enjoy cooking alone or with roommates, or you are a busy mom who tries to cook a healthy meal at home a few times a week…whatever your story may be, I think you will find this recipe simple and one that will be a new go-to.  My business keeps me very busy and with everything else going on in my life (my daughter’s activities, my husband’s work and charity commitments and now the task of moving my store into a new location) it’s nice to have a handful of some yummy recipes that we can lean on.  I hope that you try this one and keep it on file!

Serves 4. 350 calories per serving.

For the tomato sauce & zucchini pappardelle:

2 tbsp olive oil, divided

1/4 red onion coarsely chopped

3 cloves garlic sliced thin

1 (28 ounce) can peeled plum tomatoes in juice, mashed

1 sprig fresh basil

pepper and salt

1/4 cup parsley leaves chopped

4 zucchini (about 1 1/2 lbs), trimmed at both ends

For the chicken:

1/4 cup freshly grated parmesan cheese plus 2 tbsp extra for serving

1/4 cup dried bread crumbs

1 large egg white, lightly beaten with fork

1 lb boneless, skinless chicken breast split in half to make 6 to 8 thin cutlets (or just buy the thin pre-sliced pieces like I do sometimes)


4 tspn olive oil plus 2 tspn for extra serving

1/4 cup part-skim ricotta cheese

For sauce: heat 1 tbsp of the oil in a large skillet over medium-low heat. Add onion, garlic and 1/2 tspn salt. Cook, stirring, 1 minute. Cover, reduce heat to very low and cook until vegetables are softened (about 5 min.) (if veggies begin to brown just add 2 tspn water and stir) Add the tomatoes with juice, basil and another 1/2 tspn salt. Bring to simmer, cover and simmer gently 5 minutes. Then simmer very gently, partially covered, until thickened, about 20 min. Season with 1/8 tspn pepper.

Meanwhile; using a mandolin or vegetable peeler, slice the zucchini lengthwise into 1/8 inch-thick long pappardelle-like strips, turning the zucchini and slicing on 4 sides only until you see the center seeds. Discard the centers.

Remove the tomato sauce to a bowl; no need to clean skillet. Heat remaining 1 tbsp of oil in skillet over medium heat. Add zucchini and 1/4 tsp salt. Cover and cook until wilted, tossing often with tongs for even cooking – 8 to 10 min. Return the tomato sauce to the pan, add 1 tbsp of the parsley and season with 1/8 tsp pepper; cover and seat aside

On a plate, combine the bread crumbs, 1/4 cup parmesan and remaining parsley. Place the egg white on a 2nd plate. Dip both sides of chicken into the egg white and then into the bread crumb mixture to coat completely.

Heat 2 tbsp oil in each of 2 nonstick skillets (or just work off of 1–whatever you gotta do!) over medium-high heat. Add half of the chicken to each skillet and cook until lightly browned on one side, 2 or 3 min. Flip and cook until chicken is firm and lightly browned on the other side.

To serve, rewarm the zucchini in the tomato sauce over medium heat. Use tongs to make a “twist” of zucchini pappardelle on each plate. Lean chicken cutlets against the side of zucchini. Scoop a tbsp of ricotta onto each plate and spoon remaining tomato sauce on top of chicken. To garnish each plate, drizzle chicken with 1/2 tsp of olive oil and sprinkle with parmesan.

Veggie pizza: This one has become a favorite. Our friends and family love it too!

ingredients: *dough (we use the Pillsbury pre-made dough)

*1 good size zucchini

* 1 good size yellow squash

* basil pesto

*about 6-8 slices of thin cut provolone cheese fresh from deli

* parsley flakes (or fresh chopped parsley)

* lemon

preheat oven to 425. Spread your dough onto pan and go ahead and bake it until it starts to get barely golden brown (around 12 min). Meanwhile, thinly slice your zucchini and squash, then cook in olive oil until softened. Zest the lemon. (I usually squeeze fresh lemon juice in the pan while I’m cooking the veggies, plus i sprinkle in some pepper and the parsley flakes) Once the dough is lightly golden brown, take it out and spread the basil pesto covering the crust. Next, add your provolone slices, then spread out your veggies, next sprinkle the lemon zest all across the veggies and lastly, top with shredded mozzarella. Place back in oven and cook another 7-10 minutes until bubbly.


The other pizza is super simple. Same as above, cook your dough until lightly golden. Squeeze (I use the kind that’s in a bottle) pizza marinara sauce all over the crust. Next, later your thinly sliced provolone, thinly sliced fresh pepperoni (or any toppings you’d like!), and last, sprinkle shredded mozzarella on top. Place back in oven another 7-10 minutes.

Super simple and super yummy! Make up a spinach or arugula salad for a side dish. You’ll be glad you tried the veggie pizza. I promise, it is So So good!


Shine A Light On Others

I love to lift up and encourage other women, perhaps this is why I do what I do for a living. I love to compliment other women while still obtaining confidence in myself. I have learned (quite possibly from working around women for 13+ years!) that true beauty comes when you are confident in who you are, what you stand for and where you’re going. Sure, we all get off track from time to time…we are all a work in progress. When you are comfortable in your own skin and realize that you absolutely do not have it all together 100% of the time, you can be full of grace toward others around you. Can I get an AMEN?! So, why is it that we get caught up in being so dang judge-y at times?! Tonight, my post is about shining the light on a few women who have recently inspired me and I would like to share them with you.

Meet Carrie.  While I was pregnant with Haven, this amazing (she is a mother of  4 and manages to look magazine-worthy all the time!) woman hired me to be a stylist for her business. I am so glad our mutual friend introduced us and I had the chance to cross paths with her and watch her from afar. She recently wrote a blog post about my store (check it out HERE). Again, women lifting up and encouraging other women. I am beyond grateful. I want to brag on her and break down some of her recent looks she shared on her blog that I adore…


The denim jacket, the creative layers, the over-the-knee boots, the fringe…so many super hot trends blended flawlessly. Kudos, Carrie!


When I attend markets it’s major work for me. I take it very seriously and pay very close attention to what is being shown in showrooms. There is almost always a similar vibe across all the labels out there. As stressful and exhausting as market is, I do enjoy seeing what is to come as I buy months and months in advance for the store. As Carrie is showing above, flare and bootcut jeans have been on the rise now for a while. There was a strong emphasis of them at the last 2 markets I attended. I love her classic but very chic and on-trend look of a basic stripe top + black moto-style jacket + slightly flare leg denim.


Gray denim is hot now and even more so in Spring 2016! We have a few pair left in the store but more coming from a couple of our denim lines we carry so be sure to get your hands on a pair! Okay, so enough about the denim…I love how she has a truly unique style all her own. Her cropped sleeveless sweater layered over a classic white collared button up is the perfect neutral base to add her bright, colorful scarf with – as she did so creatively. It’s the little things that can really add major substance to a look.


All I gotta say is WORK IT, GIRL! Can I just reference Instagram & Facebook for a sec and “like” this a million times?! I cannot wait for our overalls to arrive at the store!!! Who says just because you’re a mom (amongst many other roles) that you can’t dress in some of the major trends? I consult women on a daily basis about taking fashion and making it appropriate for themselves. In a fashion mag full of celebrities you would see Rhianna or Kendall Jenner wearing overalls but with a tight crop top on, exposing much of their hot little bodies. More power to them! But, what happens is a more mature woman who is NOT a celebrity may look at that…see the overalls paired with that skimpy top and automatically think to herself “well, I can’t wear something like that so I guess I can’t wear overalls…” Wrong. And Carrie proves how women of all ages…in all stages of life…can wear ANYTHING SHE WANTS as long as she exudes class and confidence. Period.

I love these 2 looks simply due to the fact that they both embody plaid. =) I love the unexpected mix of a tailored blazer and ripped jeans. And, hello fabulous pink pumps (insert emoji face with heart eyes).  I also love how she could have just stopped with the floral top, but instead added a little interesting layer with the plaid shirt tied at her waist. To get out of a style rut this week, push yourself to think outside your box…or…just put a teensy bit more effort into your look. I bet you’ll feel better about your outward appearance if you do so; therefore, having a better day all around. You’re welcome ;).

Next, I move on to a woman I ran across while doing some research. < RUNSTYLERUN > As I scrolled to study her style there was something refreshing, simple and relatable about her. Here are a few of her looks:


Love this look?! You can get it inside HH now! Denim on denim is a look that I know many question when I suggest it to them at the store, but as you can see here, it works! This just screams “hey, I look totally put together with little to no effort.” Simple, plain tee + a great pair of denim you could live in (we have lots of those at HH!) and a cool denim jacket (again, several options to choose from currently inside the store, including black, a distressed slightly oversized lighter denim wash and a regular fit, darker, clean wash option.). And, I can’t help but notice the dash of fringe on her booties! As I’ve already mentioned in a previous blog post- FRINGE IS “IT” for Fall 2015-Spring 2016.


A look I, personally, have worn and one that we have shown in the store on several occassions – mixed patterns. Plaid + leopard. Floral + stripes. Stripes + animal print. Camo + stripes. Polka dot + abstracts. Ya get my drift?! There’s an art to this… or maybe not. I’ve seen some crazy mixed looks that I can’t quite go for, but who am I to judge?! Isn’t that why they say “Fashion lies in the eye of the beholder.”? If YOU like it and exude confidence, by all means, wear it sister. Back to this outfit though…perfection.


See what I mean about her simple but great style?! Nothing fancy. Nothing flashy. Solid basics will never, ever do you wrong. Above photo: Point proven. Long cardigans and dusters are a great Fall/Winter staple (and will pretty much be available in some form inside the store all season as we get new merchandise almost daily). I, personally, love to mix my browns/tans with black. Don’t be afraid to rock it. Throw out those old “rules” and while we are at it…yes, you can absolutely wear white after Labor Day. Thank you, genius, who called it “winter white.” =)


And here we have another example of what I already mentioned: a denim jacket paired with black denim paired with brown (cognac) shoes/bag. Plus, I love her long tunic top paired with the other elements. A cool, casual look that can be easily achieved. (and HH is here to help you!)


Full a-line midi-length skirts (especially in lady-like florals) paired with an edgy moto-jacket is look that has been trending for a while and one that we have offered at the store. She styled this “to a tee.”

To close out my post I’d like to introduce you to this sweet young lady who reached out to me via social media and said she had been following us on IG, had recently decided to start a fashion based blog and would like to come down from NW Arkansas and feature Hazel’s Haven for her first post. I was happy to oblige because it took me back to when I first started blogging years ago. I get so much fulfillment mentoring or helping others when I can. Current Style Trends

As the owner of a women’s clothing store there is nothing I love more than creating an outfit for a client or customer. When I had the time (before my child was born and before I opened a business) I used to help women create different outfits within their closet, pack for trips or even do their shopping for them.  However I could help them feel comfortable and “pulled together”…that was my goal.  So much has changed and evolved since this time in my life I just spoke of. My family always comes first so once my day is done at my store, it leaves little to no time to go to client’s homes; however, the beauty of it all is they get to come to my store (online & brick and mortar) and choose from SO many options ranging from low to moderate price points and trendy to classic styles (always with quality in mind). I do the ultimate personal shopping now!! I get to be a personal shopper to so many wonderful women in my hometown and all across the US!! It’s a tough job, my friend, but somebody has to do it. =) So…to kick off our website launch I’d like to touch on some staples you are sure to see this Fall 2015 and transition into 2016, many of which you will see offered on our online store (merchandise will change frequently!)…

Plaid. {Yep, still going strong and will continue to do so on into Spring 2016} A full blown plaid suit. A plaid dress. A cozy plaid flannel shirt. Just. Anything. Plaid.

Several things I’d like to point out here. #1. Have fun with fashion. Don’t take yourself so seriously, sheesh! I love to mix patterns like the model (don’t know her name) shows with the camo mixed with plaid. #2. An easy style trick to make it look like you are “on trend” and put some effort into your look {even though you didn’t…sshh! it can be our little secret ;)} just throw on some great jeans – preferably from my store of course (shameless plug) – slip into a basic tee or graphic tee and then just tie a plaid shirt around your waist. Ta-dah! #FoolProof. Now just slip on some ankle booties and a long “bohemian-vibe” necklace and you’re look is polished!

Note: Just because something is “on trend” does not mean it is for everyone or that you should feel tempted to try it. If you’re not feeling it, by all means, DO YOU. Being yourself and putting your spin on things is ALWAYS IN STYLE. (I’m kinda referring to the super crop top and plaid suit) (insert emoji winky face with the tongue out)

Now we move on to my personal favorite: DENIM. Why? Because they are such a lifestyle staple these days. So many brands make jeans now in such a comfortable, stretchy, soft, could-wear-days-in-a-row-and-not-wash (GUILTY!) fabrication. Inside our store we have a pretty extensive denim collection that we offer. What’s even better is that pretty much anything and everything goes. Dark washes worn in the Summer – not just Winter. Same goes for light washes being worn in the Winter, not just the Summer. Rips and tears, baggy and skinny, super long flares and ankle skinnies, shades of gray (ok, pun intended), black/olive/khaki/white/among other colors, prints, coated…you see what I mean?!? Lots to be excited about here because they make getting dressed pretty simple. So many “jeans” now look like “dress pants” in a way. Many of my customers always say they love the denim we carry because some of them they can get away with wearing to work. Score! So come in and let us help you fight through the frustration of trying jeans on. We are sure to help you find a pair that you love. Definitely worth every penny when you buy quality denim.

Ponchos/ Kimonos/ Cardigans/ Dusters/ Vests/ Capelet/ Moto Jacket– whatever you wanna label them as, they’re always a great Fall layering staple to have several of hanging in your closet. And, of course, I choose some of my favorites from market for you to snag as well! Anyhow, these extra little layers are great and effortless when the last thing you want to concern yourself with is putting effort into what to dress your body in for the day. Anything that reminds you of the 70’s is IN. Man, is it ever! Think fringe, flares, patterns, furs, etc.  Many, including myself at times, refer to this look as #bohemian#bohochic#bohoglam…we do lots of these hashtags on our Instagram because this vibe is everywhere! There is so much I did not cover in this post. I could go on and on and on about style and bore you to death, perhaps, about all they ways to wear things.
